Four farms inside ninety miles decide half of our menu. We just cook what turns up.
Our printed menu lists four sides. Some weeks two of them are not available and two others have taken their place.
Why
We buy from four farms, all inside ninety miles. None of them can tell us in February what will be good in May. If the broccolini is thin we do not buy thin broccolini, we buy whatever is thick and good and cook that instead.
The kitchen writes the change on the board at four every afternoon. Ask your server, they will know.
